The first evidence of this special fresh pasta dates back to the early 1800s. The term strozzapreti (priest-choker) has always given rise to stories and legends; although they are a typical dish of Emilia Romagna, it maintains the same name in almost all regions of Italy. But where does this term come from? Although they are of popular origin, it is said that the strozzapreti were once prepared by housewives mainly as a gift for the priest of the country . According to legend, they did so on behalf of their husbands of anti-clerical creed, who thus wished them to “choke”. For others, however, pasta owes its name to its shape, so particular that it could even choke the clergy despite being notoriously the most accustomed to the vices of the table. Finally, according to other historians, the name is directly related to their goodness: ” so good that you could choke!!!
